For my son every meal has to be pasta & this is a great way to feed him some spinach 🙂

Fusilli with spinach & parmesan


Ingredients

whole wheat Fusilli – 1 cup (cooked as per packet instructions)
Onion – 1 small finely chopped
Garlic – 1 tbsp. finely chopped
Spinach – handful (finely chopped) – I used frozen spinach. If you have fresh easily available you can use that too.
Nutmeg – grated. (Just run the seed on a fine grater few times)
pepper – to taste. (If this is not for a kid you can also use chili flakes to bring in the heat. And if you do that add in the chilli flakes with garlic)
salt – to taste (Parmesan being sharp in its flavour be careful with seasoning)
Parmesan – 1/4th cup – Grated
Cream – 1/4th cup
Olive oil or Butter – 2 tbsp.

Step I
Heat oil or butter a pan. Add chopped onion & garlic. Sauté for few minutes and grate the nutmeg in. Now add spinach & cook on medium to high head for few minutes. Add salt and pepper to taste. Use very little salt at this stage & adjust later if required.

Step II
Add the pasta, & toss. Now take it off the flame and stir in parmesan & cream. Put the pan back to the flame, add some water, give it a good mix & cook on high flame. Adjust the consistency of sauce at this stage. Best is to keep nice and creamy but still flowing and covering the pasta very well. Too dry or too watery may just spoil the taste. Also check seasoning & if required add some salt.

Step III
Serve hot with a generous sprinkle of grated parmesan.
