I wonder if I should call my self busy or lazy to justify my love for simple, delicious & healthy recipes. Here is another Chef Sanjeev Kapoor recipe (quantities and measurements altered to my need) which is simple to do & just delicious.
Spinach – 250 grams finely chopped ( I used frozen spinach. You may use fresh or frozen whatever is available)
Potato – 2 Medium – Diced
Sesame – 1/4th cup – Pan roasted
Oil – 2 tbsp.
Cumin – 2 tsp
Green Chili – 2 chopped
Asafoetida – 1/2 tsp
Salt – to taste
Tumeric powder – 1 tsp
Coriander powder – 1 tbsp.
Cumin powder – 1 tsp
Garam masala – 1 tsp
Curd – 2 tbsp.
Heat oil in a pan. Add cumin seeds & let them crakle. Now add green chili, asafoetida & potato. Sauté potato for few min & add salt. Cover and cook for few minutes. If you think it might get to the bottom just sprinkle some water before you put the lid. Check the potatoes in few minutes if they are done. To keep this simpler you can even use boiled diced potato. And if you choose to do that… you just need to sauté potato for few seconds with other ingredients in the pan.
Add the spinach & give it a stir on medium to high flame. Add, turmeric powder, cumin powder, coriander powder & garam masala & mix well. Now add curd, give it a stir and cook for few minutes with the lid open.
Add roasted sesame, mix it well and the turn off the flame.
This dish serves best with Indian flat bread.
