]I did what many of us do with those left over bananas 🙂 A banana cake. However I like walnuts I my banana cake, it’s a good combination so that’s how the Banana Walnut cake today. Honestly I don’t know if there is any difference between a banana cake & banana bread other than the bread being baked in a loaf tin. For me this is a cake. So have a look & do share your views with me.
Butter – 1 cup (Room Temperature)
Eggs – 2
Banana – 2
Butter milk – 1/4th cup (This can be made with one portion of curd and 3 portions of water)
Vanilla Essence – 1 tablespoon
Plain flour – 1 and 1/2 Cup
Baking Soda – 1 and 1/2 teaspoon
Salt – Just about a pinch (Optional)
Caster Sugar – 1 Cup
Cinnamon Powder – 1/2 teaspoon
Walnuts – 1 cup chopped
Began with preheating the oven (i used it on Bake mode) at 180 degree celsius. Slightly grease your cake tin (I used a 9 inch round cake tin) and keep aside.
Sieve Flour, salt, Baking powder, cinnamon powder and keep aside. Add the chopped walnuts to the flour and slightly mix them in the flour mix.
Sieve the sugar in another mixing bowl and keep aside
Now peel and mash the bananas and keep aside
Break two eggs, beat them slightly and keep aside.
Cream the butter first. I used an electric processor (you can do this with your hand but i am sure this is too much work ;-)) Add sugar and cream further for a few more minutes. Now add half the egg mix and vanilla essence & beat further. This should take about 4 – 5 minutes. Add remaining beaten eggs and beat for another 5 minutes. Now add banana to the mixture & mix it in for a few minutes (3 – 4 minutes are just good to go). Pour in the buttermilk and beat it further for next 2 minutes.
Now add the wet mix to the dry ingredients & fold it carefully. Dry & wet ingredients should be like just married and making merry 🙂 Now the cake mix is ready to go into your cake tin. Once all the mix is poured in the take tin slighty move the tin to evenly spread the cake mix. Its best not to use any spoon or spatula here. Jut carefully hold your cake tin and move it circular motion to spread the mix evenly.
Let the cake tin go in the oven for 35-40 minutes (at 180 degree celsius). You may want to check using a skewer if its done. The top turns quite brown and when a skewer is tested it comes out clean.
Once out of the oven please leave it for 10 minutes before you take it out.
And the cake is ready for a bite 🙂
